You can use a tubular latch, also called a mortice latch, on internal doors that do not need to be locked. You fit this type of door latch into a recess cut into the side of a door. They have a spring-loaded bolt which extends into a strike plate installed on the door frame. Turning the door handle or doorknob operates these latches, retracting the bolt to open the door.
